03 / RECURSIVE IMPROVEMENT

BLUEFIN,
ITERATED WEEKLY.

Every Saturday is a new run. We study aging windows, yield, slice thickness, sell-through, and guest feedback—then improve the next batch.

The tuna doesn’t self-improve. Our handling does.

WATERFRONT INPUT.
PARK-SIDE OUTPUT.

Our tuna is sourced and processed through Tunaville Market & Grocery on San Diego’s working waterfront, then selected cuts are brought north for the Saturday run.

Tommy Gomes is a fourth-generation commercial fisherman, a lifelong advocate for responsible fishing and whole-fish use, and host of The Fishmonger.

Species, catch area, vessel, landing date, aging window, and available cuts vary by batch and are confirmed at release.
